Caitlin’s Confections: Banana Pudding

This is a quick and easy crowd pleasing dessert inspired by the Banana Pudding from Magnolia Bakery in NYC. You can get it right in Grand Central- it was our first stop off the train on a recent girl’s trip! While it doesn’t quite compare, it shares the same flavor and texture profiles and is a very simple, at-home version. Growing up, trifle was one of my mom’s go-to desserts and this is a fabulous option to put in your rotation.

1 Box Instant Vanilla Pudding (prepared according to the package)

3 Cups Heavy Whipping Cream

1 Box Vanilla Wafers

4-5 Ripe Bananas

Whip your heavy whipping cream in a stand mixer until stiff peaks form. Careful add spoonfuls of pudding slowly, until incorporated. Layer your trifle first with your whipped pudding mixture, then vanilla wafers, then bananas. Repeat until the third layer of whipping pudding and then top with wafer crumbs. (There were plenty at the bottom of the bag for me to use!) Let sit overnight for best banana flavor and serve chilled in small dishes.
