Let’s get these pumpkin recipe going! It’s officially October which means pumpkin is surpassing apple in my baking repertoire. Give me all the pumpkin everything!
These pumpkin cookies are more cake cookies than regular cookies, which means they’re light and fluffy. The chocolate perfectly complements the pumpkin and oh boy, they’re good. I got the seal of approval from all the teachers at school.

Ingredients
1 stick of butter
1/3 c white sugar
2/3 c brown sugar
2 eggs
1 can pumpkin purée
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 1/2 c flour
chocolate chips
Recipe
1. In a mixer, whip your butter and add both white and brown sugar. Once combined, add the eggs and pumpkin. Make sure you are using pure pumpkin purée.
2. Add in your baking powder, baking soda, cinnamon, and flour. Mix slowly, just until combined. Stir in your chocolate chips, as many as you like!
3. Your batter should be wet enough that you cannot roll it into a ball. Instead, plop spoonfuls of batter onto a parchment paper covered cookie sheet and shape with your fingers.
4. Bake your cookies at 350 degrees for 10-12 minutes. I prefer these cooled, but I’ll also never say no to warm cookies.
