Looking for the perfect, easy, end of summer dessert? Look no further. This Jammy Blueberry Peach Galette is super speedy to whip up and oh so good. Who says summer fades comes September 1st?


I love galettes for their ease, but also for the fact that they are easily served/held as they are enjoyed. It makes it perfect to serve to a small crowd. We enjoyed ours with breakfast and truthfully, there was no guilt because it’s naturally sweet. The perfect little pastry!
I will highly suggest using parchment paper and paying attention to bubbling juices if, like me, you use frozen fruit. Any mix works, but at the end of the summer, I prefer blueberries and peaches. I want to hold onto those flavors as long as possible.

Ingredients
1 Pillsbury pie crust
2 spoonfuls blueberry jam
2 c blueberries
1 c peaches
2 spoonfuls brown sugar
Juice from half a lemon
Recipe
To begin, roll out your crust and spread your jam in the center in a pretty wide circle. Mix your blueberries and peaches with brown sugar and lemon juice until coated. Then, pile your fruit in the middle of the pie crust. Fold the edges of your crust in towards the center until your galette is sealed and brush the crust with an egg wash. Bake at 350 degrees for 40 minutes or until your crust is browned and fruit is bubbling. Enjoy warm or chilled!
