Caitlin’s Confections: Twix Topped Brownies

These brownies might look a bit messy but believe me when I say that they’re so good, no one will care.

Twix Topped Brownies- super simple and perfect for any party. Use your favorite brownie mix (or your favorite recipe) for a gooey, fudgy brownie. Then top with caramel sauce, mixed with shortbread cookies, and coat with melted chocolate. It’s incredibly easy and a huge crowd pleaser.

I’m always looking for fun, creative desserts to try and I love a good dose of chocolate. Also, if you want to throw one in the microwave and add a scoop of ice cream, by all means!

Ingredients (Brownies)

One box of brownie mix

2 eggs

1/3 c olive oil

1/2 c water

Ingredients (Shortbread Caramel)

One dozen shortbread cookies, crushed

1 c sugar

8 tbsp. butter

3/4 c heavy cream

1 tsp. vanilla

1 tsp. salt

Ingredients (Chocolate Shell)

1 c chocolate chips

1 tsp. coconut oil


First, prepare your brownies. I recommend cooking them just until they’re gooey in the center. I prefer my brownies on the softer side. 30-35 minutes at 350 degrees normally does the trick. While your brownies cool completely, get to work on your caramel sauce.

On medium heat, warm your sugar until it melts and forms a golden brown syrup. Turn heat to low and add butter, stirring continuously. Add heavy cream, vanilla extract, and salt to the mixture and cook for 5-10 minutes more. Pour the sauce in a glass jar and let set to room temperature. To thicken, place it in the fridge.

Once thickened, add your crushed shortbread cookies and mix. Spread in a thin layer over your brownies and refrigerate.

In a microwave safe bowl, melt your chocolate chips and coconut oil. I prefer milk chocolate chips but you can pick your favorite. Heat at thirty second intervals until smooth and then spread on top, returning your Twix Topped Brownies to the fridge so the chocolate can harden.

When ready to serve, use a very sharp knife to cut your brownies into pieces. Eat many, and enjoy!
