Caitlin’s Confections: Nutty Banana Cake with Honey Cream Cheese Frosting

Some days you just need to bake a cake. Everyone’s been making banana bread during quarantine- well, I’m introducing banana bread’s cooler cousin. This nutty banana cake is made with ripe bananas and almond flour, topped with a honey cream cheese frosting that compliments it perfectly. It’s one of those easy, one bowl recipes I love to have in my repertoire.

Ingredients (Cake)

2 bananas

2 eggs

1/3 c coconut oil

1/3 c honey

1/2 c greek yogurt

1 1/2 c almond flour

1 tsp baking soda

Ingredients (Frosting)

1 pack cream cheese

1/2 stick butter

2 tbsp honey

2 tbsp coconut oil

1 c powdered sugar


In a stand bowl, combine your bananas, eggs, oil, honey, and yogurt. Mix until smooth and light. Then, fold in your almond flour and baking soda.

Pour your matter into a greased cake pan (square or circular) and bake at 350 degrees for 35 minutes. This cake is moist and soft, but a knife should come out clean when placed in the center.

While your cake is baking, whip up your frosting in a stand mixer. Combine cream cheese and butter until smooth and fluffy. Then, add honey, coconut oil, and powdered sugar. Your frosting should be light, but thick enough that it won’t slide off a spoon.

Once your cake is completely cooled, frost the top with your honey cream cheese frosting and serve!
